Watermelon Beer Cocktail

Summertime just screams HAPPY HOUR to me. I'm not sure why that is, I'm just much more inclined to order a fruity cocktail or a beer in the summer. I want to meet friends for drinks and sit outside under umbrella-covered tables. And most beach activities are just down-right better when you have a drink in your hand. BBQs, picnics, days on the beach, laying by the pool, fireworks. All better with a cold drink. Summer is just meant for relaxing, so drinks are helpful with that.

For this cocktail, I used one of my currently favorite summer beers: Hell or High Watermelon. I'll start by saying that if you don't like fruity beer, you probably won't want this. It's light, kind of like a shandy but without the lemonade, and has a definite watermelon taste. I'm addicted.

Watermelon Beer Cocktail

Makes one drink

To make your watermelon puree, cut half a small watermelon into cubes and puree in a food processor. Pour puree through a fine mesh strainer over a container that has a spout (for easy pouring later). Lightly push the puree through the strainer with a rubber spatula until mostly pulp and seeds are left in the top. This will make enough watermelon puree for a few drinks.

In a cocktail shaker filled with ice, add 2 oz. both vodka and watermelon puree and shake to combine. Pour over ice in a old fashion glass and fill the rest of the glass with the beer. Garnish with a piece of watermelon and enjoy.

**Because the beer is on the tart side or (for lack of a better term) beer-y, this cocktail works out best if you have a really sweet watermelon. You need that sweetness to combat the beer flavor and mellow it out a bit. You also will taste the beer in this, which I actually like but might not be for everyone. Cheers!
