So we went tent camping in Lancaster, PA, last weekend and it was awesome. It was kind of a last minute decision and I'm so glad we decided to pull the trigger and go after talking about it all summer. Friday night we set up, made a fire, and cooked dinner and s'mores over the fire. Saturday we ate at the smorgasbord, drove around to a couple shopping areas and outlet stores, and had a lovely dinner and drinks at the Lancaster Brewing Company (their pumpkin beer is fantastic!)

Growing up, my family owned a pop-up camper and we went camping almost every summer, so camping really means a lot to me. Tim and I have talked on several occasions about hoping to purchase some kind of camper/trailer in the future, and that just seems like such a dream. I know camping isn't for everyone, and there are surely parts that aren't for me (bugs), but I think it's a really fun way to spend a weekend. This was the first time I had ever been tent camping and thanks to a giant queen-sized air mattress and our leak-free tent (it rained all Saturday night), it was just a charming experience.

If you follow me on Instagram, you might have noticed that I decided to make a hashtag (#TimDianaVacation) to document some of the vacations we have planned. I wanted to be able to look back on them easily, and I don't care if creating a hashtag for yourself is lame. Because I'm pretty lame anyway.

Proud tent parents. / My cute car was a camping champ! / Our weekend home. / Leopard print even camping. / Walking to the office for firewood. / A fun building on the grounds. / Leaves are falling. / My mom's make-up box that I always remember from camping as a kid! / Blowing up our giant air mattress. / Fall mums. / Pumpkins!

Recipe: Spiced Apple Cider

Guys, it's fall! And if you removed chai tea lattes, pumpkin spice lattes (PSL), and hot tea out of my life, I would be left with the deliciousness that is spiced apple cider. In the chillier months, I love to spend my nights snuggled up on the sofa with my heated blanket, computer, a mug of hot apple cider and preferably two kitties and a boyfriend.

This is another super easy recipe and can even be made in a crock pot or in larger batches for a seasonal party.

Spiced Apple Cider

Yields 2 mugs

  • 2c apple cider
  • 2-3 slices of orange
  • 1tsp ground cinnamon
  • 1/2tsp ground nutmeg
  • 1/4tsp ground cloves

Throw all ingredients into a pot and simmer for 3-5 minutes until hot. Stir occasionally. Once the cider is hot, remove the orange slices and you can either strain out some of the spices with a fine mesh strainer, spoon some of it off the top, or stir and drink as is.

If I was having guests and serving this for a party, I would probably pour it through a strainer. But for just me, I'm fine with just spooning some of it off or leaving it alone. I'm easy.

Garnish with a cinnamon stick and some orange slices.

If you wanted to dress this drink up for a party, add 2-3 ounces of dark rum or another warm liquor like brandy or whiskey. You could add how ever much you want actually, depending on how crazy you want your party to get. :)

Now that we are in the full swing of fall, stay tuned for apple and pumpkin treats for the next month or two!

Also, chalkboard speech bubble mugs make ever drink better! That's a promise.

September Goals

It's pretty hard to believe that soon I'll be pulling out my boots and coats from under my bed. August is over, but man it was a great summer. Last month I worked on a bunch of recipes in the kitchen (and that also means a lot of failures,) and got outside a ton! Walked to breakfast, Farmer's Markets, canoeing, and even went to Tyler State Park last weekend. Our bedroom is still a disaster, but it will get done in due time. New month, new season, new goals!

  • Get through this first month of Insanity. Yes, we are really doing it. My first goal is to really get through the first month, then I'll worry about the second. Wish me luck (I might seriously need it.)
  • Get my craft on. I took a bit of a craft break during the summer because of having way too much to do these past few months. Trying to spend so much time outdoors means that I didn't spend a lot of time indoors making things. Need to find a happy medium for fall.
  • Make time for more walks. Because they are a nice thing to do.

Hope everyone had a great and relaxing Labor Day weekend.

September Goals

I mentioned this a few times already, but I love fall. As much as I love summer and the warm days, I do tend to get tired of it about now. I want to wear jeans and scarves and boots. No more shorts for me (unless coupled with tights and boots).

September will be the first month where T is around a lot less. He's a busy guy in the fall and though it will be sad not having him around as much, I'm excited for some alone time to get projects done and relax.

I've been loving setting up these goals each month, but I haven't been too great with getting them all done. Hoping to get better at that this month!

  • Take more walks
  • Set up Etsy shop (I'm serious this time!)
  • Drink more pumpkin beer!
  • Get on top of this blog. I need to get better at prepping blog posts ahead of time better.
  • Celebrate my alone time.
  • Take a new blog photo.
