I've always liked ice cream well enough, but something has changed. I now love ice cream. I crave ice cream. When we were in Tennessee, one day I ate two ice cream cones 3 hours from each other. I've become well known among friends to eat froyo for dinner. So when I looked in my kitchen the other day and realized I had some leftover vanilla ice cream and mini ginger snaps from a failed recipe projects, plus I always have lemon curd in the fridge, I needed to make ice cream sandwiches. And then I needed to eat every one of these. So be warned.
Mini Ginger Lemon Ice Cream Sandwiches
Yields as many sandwiches as you can make
- Pint of vanilla ice cream
- Jar of lemon curd (or make your own)
- Mini ginger snap cookies (Mine are from Trader Joe's)
Start with a cookie and spread with about a 1/2 teaspoon of lemon curd. Add a teaspoon of vanilla ice cream and finish with another cookie. Place in the freezer for at least a half hour before serving (or eating).
